My baby's skin seems a little dark to me. I'd like to change the darkness of it - is that possible?

Your little son is very handsome - what a lucky mother you are to have such a cute baby!
Your baby's skin shade will continue to develop and change for much of his first year of life. In fact, it may not settle out completely until he is in his toddler years.
The best thing for you to do at this point is to keep him protected from excessive sunlight, which can darken his pigmentation. I would recommend letting him get some sun, however, as it is important for helping him produce Vitamin D.
There are skin lightening creams, but I would not recommend that you use them on a baby. If you'd like to try one you should first consult with his doctor to make sure it will be safe.
Applying lotions or oils that are baby-safe can help keep his skin smooth and in good condition, though.
Test anything you want to use on his skin on a small patch of skin first, to make sure he's not sensitive to it.
Olive oil, coconut oil, calendula oil, and some baby lotions are all good to try for his skin.
